
As you would expect, it was golden yellow in color and was clear. There was a soapy-looking foam head, and there was a citrusy hop aroma.
The beer was medium bodied and went down surprisingly smooth. There was almost a light honey-like flavor when it first touches the tongue. That flavor quickly changed to a bold, mostly piney, and a little citrusy hop flavor. The hop flavor grew into a dry, bitter hop finish.
What I thought about when enjoying this was pairing it with a “chokes and cheese” dip. I’m most familiar with it from Flatbranch Pub and Brewing, but I’ve also had it homemade. Either way, the flavor of the dip would go well with the bitterness from this IPA.
I wasn’t sure what to expect, but thought it was a pretty good winter IPA, as it had a decent body and nice honey-like flavor up front. The hop flavor leaned a little bit more toward a pine resiny flavor, which was pretty good for the holiday season.
